With this easy recipe, you basically kill two birds with one stone. Or two dishes with one oven, that is. With just two main ingredients (you guessed it, salmon and sweet potatoes) and a baking sheet, you get a healthy and delicious entrée AND side in under an hour. 

As someone who lives alone, quick cooking times and minimal ingredients are my only requirements when it comes to dinner, so this recipe is one of my holy grails. More than anything, this recipe for salmon and sweet potatoes is a time-saver. For me, it’s the ideal weeknight meal. After a long day at work, the last thing I want to do when I get home is spend the whole evening working more in the kitchen. All I have to do is add a little olive oil and seasoning, and BOOM! Dinner is served.

I usually divide this recipe in half to serve just myself or save the other half for meal prep, but you can also double it to serve a full house. You can make this meal ahead of time, storing each part separately in airtight containers in the fridge. Leftovers will keep well when refrigerated for up to 4 days.

HOW TO INCORPORATE OTHER VEGETABLES

I like to mix and match with this recipe. In addition to sweet potatoes, you can cook broccoli, cauliflower, zucchini, red potatoes, and carrots following the same technique! Just make sure you adjust the cooking times accordingly. Zucchini, for example, would take half the time to cook.

HOW TO MAKE SALMON AND SWEET POTATO IN THE AIR FRYER

This salmon and sweet potato recipe works just as well in the air fryer. Your cooking time may vary based on the salmon’s thickness and your specific device, but I typically toss in my sweet potatoes in a single layer to cook for about 5 minutes before adding my salmon for another 7-10 minutes.

Ingredients

  • 2 salmon fillets 6 ounces each
  • 2 medium sweet potatoes peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  • Preheat your oven to 400°F. Toss the sweet potatoes with 1 tablespoon olive oil, salt, pepper, garlic powder, onion powder, and rosemary. Spread them on a baking sheet.

  • Bake in the preheated oven for 15 minutes until they begin to soften.

  • While potatoes cook, drizzle the salmon fillets with the remaining 1 tablespoon olive oil and season with salt and black pepper.

  • Remove the baking sheet from the oven, push the sweet potatoes to one side, and place the salmon fillets on the other side of the sheet.

  • Return to the oven and bake for 10-15 more minutes, or until the salmon is cooked through and flakes easily with a fork.
